Dit is het coolste Cambodjaanse restaurant van Amerika

Mocht je binnenkort naar Californië (en in het bijzonder: Oakland) afreizen, zet dan restaurant Nyum Bai op je lijstje. Dit Cambodjaanse restaurant is misschien wel het coolste ter wereld. Beroemde Amerikaanse food websites als Eater, Thrillist en Bon Appétit plaatsten Nyum Bai niet voor niets in hun lijstjes met de beste restaurants in Amerika in 2018.

Het lekkerste uit de Cambodjaanse keuken

Mocht je niet zo goed hebben opgelet bij topografie en denken – Cambodja, waar ligt dat ook alweer? – Cambodja is een land in Zuidoost-Azië. Het grenst aan Laos, Thailand en Vietnam. Dus je kunt je wel indenken hoe die Cambodjaanse keuken moet smaken.

Gerechten als Cha Bai (zeg maar de Cambodjaanse nasi), Amok (gestoomde vis met kokosmelk in bananenblad) en Koh: gekarameliseerd buikspek met een zachtgekookt ei in kokoswater (lijkend op thit kho tàu): de Cambodjaanse keuken is fris, kleurrijk en boordevol umami.

Cambodjaanse rock & roll

Bij Nyum Bai serveren ze al deze gerechten en meer. Met dat eten zit het dus wel goed, tot zover duidelijk. Maar waarin Nyum Bai zich echt onderscheidt van andere Cambodjaanse restaurants, is het interieur. Hier geen donkere kleuren en goudkleurige Boeddha-beelden: nee, het restaurant oogt wit en licht, met frisse pastelkleuren. Daardoor springen de kleurrijke gerechten er echt uit.

Bovendien draaien ze er Cambodjaanse pop en rock & roll-liedjes uit de jaren ’60. Dat zie je ook terug aan de ingelijste cd-boekjes en vintage radio’s aan de muur. Ook heel tof is het behang in de wc, met illustraties van Cambodjaanse helden en bezienswaardigheden.

Het coolste Cambodjaanse restaurant

Nyum Bai wordt trouwens gerund door de Cambodjaans-Amerikaanse chef Nite Yun. Zij werd geboren in een vluchtelingenkamp in Thailand en groeide op in Amerika. Toen ze naar San Francisco verhuisde, miste ze daar de aanwezigheid van Cambodjaanse restaurants. Inmiddels is haar restaurant in Oakland een jaar open.
